"Spring Aroma Ensemble" - A French Dinner Program Inspired by the Scents of Spring

mesm Tokyo presents "Spring Aroma Ensemble" a limited-time dinner program themed around the fragrances of spring, at the 16th-floor French dining venue Chef's Theatre from April 1 to June 30, 2026. Crafted by Culinary Meister Koki Kumamoto, this exclusive full-course menu layers seasonal ingredients with the signature scents of the budding season, including floral notes, herbs, and delicate smoke. A significant highlight of this program is the opportunity to enjoy Chef Kumamoto’s signature dish, Salmon Aspic, which makes its debut as an appetizer within a seasonal program. The journey begins with an aromatic morel mushroom consommé, followed by elegant dishes featuring elderflower and asparagus that capture the essence of spring. The experience continues with roasted duck infused with refreshing lemongrass and a hint of cherry blossom smoke, concluding with a sophisticated dessert where rose and strawberry harmonize beautifully.
