At "Chef's Theatre" restaurant, a unique lunch program titled Winter Breath - Scent Suite, themed around the scents of winter, will be available for a limited time from December 1, 2024, to February 28, 2025.

This winter's lunch course is a scent-focused program created by Executive Chef Kumamoto, who combines spices and herbs like a perfumer to bring out the full potential of the rich, flavorful winter ingredients. The program celebrates the essence of winter through the "scents" of the dishes.

The menu features a variety of aromatic dishes, such as an amuse of "Octopus Verrine" with rare domestic bergamot, recreating the look of snow, and "Eel Monaka" infused with the fragrance of cloves, as well as an oriental meat dish with a hint of cardamom, and a dessert with a caramel sauce flavored with the scent of sansho pepper, all crafted to evoke the essence of winter in a bistronomic French style.
