Floral Jewels: A Sustainable Bistronomy Experience at mesm Tokyo

At mesm Tokyo, we are partnering with AGRIKO, a leader in cutting-edge sustainable agriculture, to introduce a new eco-conscious bistronomy experience that minimizes environmental impact while celebrating gourmet excellence.
 
As the first step in this initiative, starting in April 2025, our 16th-floor French dining restaurant, Chef’s Theatre, will offer “mesm’s Pâte de Fruits”—a delicate confection crafted with edible flowers grown using AGRIKO FARM’s innovative aquaponics farming system.
 
Resembling “floral jewels”, these exquisite treats bring an elegant and memorable finish to your dining experience, blending sustainability with the artistry of French pâtisserie.
