Dinner Program "Winter Tales – Shichi-juni-kō"

At the restaurant “Chef’s Theater”, we are pleased to present "Winter Tales – Shichi-juni-kō", a limited-time dinner program inspired by the profound beauty of Japan’s winter. This special offering will be available from Saturday, January 11, to Friday, February 28, 2025.

The theme draws from the “Shichi-juni-kō”, Japan’s traditional calendar that divides the year into 72 subtle micro-seasons. Each reflects nature's delicate transitions, offering a uniquely Japanese perspective on the changing seasons. This dinner program celebrates these moments, blending the essence of winter with the anticipation of spring.

The menu, created by Chef Kumamoto in a refined bistronomy style, features seasonal ingredients at their peak during the solar terms of Tōji (Winter Solstice), Shōkan (Lesser Cold), Daikan (Greater Cold), and Risshun (Beginning of Spring). Highlights include an amuse-bouche with richly flavored domestic trout (Daikan), a main course of roasted Hokkaido venison (Tōji), a rare treat in French cuisine, and a dessert inspired by “awayuki” (light snow), incorporating strawberries (Risshun), a symbol of spring’s arrival.

Embark on a culinary journey that captures the essence of Japan’s deep connection to nature. Through this exquisite menu, experience the beauty of the “Shichi-juni-kō”, where each dish reflects the subtle transformations of the seasons and the quiet poetry of winter transitioning into spring.
